Carolina Gold BBQ Sauce
South Carolina's mustard-based BBQ sauce is unlike any other. Tangy, slightly sweet, and with a pleasant kick of heat, this golden sauce is the perfect companion for smoked pork.
Ingredients
- 200ml yellow mustard
- 80ml apple cider vinegar
- 60ml honey
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon butter

Combine all ingredients except butter in a saucepan.

Bring to a simmer over medium heat, stirring frequently.

Reduce heat to low and simmer for 10 minutes, stirring occasionally, until the sauce thickens slightly.

Remove from heat and stir in butter until melted and incorporated.

Let cool. Transfer to a jar and refrigerate. The sauce will thicken further as it cools.

Use as a finishing sauce, dipping sauce, or basting sauce for pulled pork, smoked chicken, or grilled sausages. Keeps for 2 weeks in the refrigerator.
