Smoked Beer Can Chicken
Beer can chicken is a fun and effective way to cook a whole bird. The beer steams from inside, keeping the meat incredibly moist, while the smoker renders the skin crispy and flavorful.
Ingredients
- 1 whole chicken (about 2kg)
- 1 can of beer (lager works best)
- 2 tablespoons olive oil
- 2 tablespoons your favorite BBQ rub
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper
- 1 tablespoon brown sugar
- Salt and pepper

Remove giblets from chicken. Pat dry thoroughly inside and out.

Rub the outside with olive oil, then season generously with the spice mixture.

Open the beer can and pour out (or drink) half. Add a clove of garlic and a sprig of rosemary into the can.

Lower the chicken onto the beer can so it sits upright with the legs forming a tripod.

Set smoker to 175°C (350°F). Place the chicken (on its can) on the grate.

Smoke for 1 to 1.5 hours until the internal temperature at the thickest part of the thigh reaches 75°C (165°F).

Carefully remove from smoker (the can will be very hot). Let rest 15 minutes, then remove the can and carve.
